Petai Fried Rice

Ingredients

  • 2 tablespoons sunflower oil
  • 100g petai beans
  • 1cm ginger, cut into fine strips
  • 500g cooked white rice
  • 2 tablespoons vegetarian sambal or chilli boh
  • 100g bok choy, sliced
  • 40g vegetarian mock meat, diced
  • 40g vegetarian dried shrimp
  • 1 tablespoon soy sauce
  • salt to taste


Directions

Heat the oil in a wok and fry the petai beans until fragrant. Dish out and set aside.

In the remaining oil, fry the ginger until fragrant, then add the rice and fry, tossing the wok vigorously. Add the sambal and mix well, then add the rest of the ingredients, including the petai.

Season to taste and fry for about 3 or 4 minutes. Serve garnished with salad.
